Cherry Marmalade Swirl Cheesecake Bars
Ingredients
For the crust:
200 g digestive biscuits or graham crackers, crushed
100 g melted butter (vegan butter works too)
2 tbsp sugar
For the cheesecake layer:
400 g cream cheese (or vegan cream cheese)
100 g sugar
2 eggs (or flax eggs for vegan)
1 tsp vanilla extract
120 g sour cream or plant-based yogurt
For the swirl:
6–8 tbsp Den Gamle Fabrik Cherry Marmelade
Instructions
Preheat oven to 175°C (350°F). Line a 20×20 cm (8×8 inch) square pan with parchment paper.
Make the crust: Mix crushed biscuits, melted butter, and sugar. Press firmly into the bottom of the pan. Bake for 8 minutes, then let cool slightly.
Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in vanilla and sour cream.
Assemble: Pour cheesecake mixture over the cooled crust. Spoon dollops of cherry marmalade on top (about a teaspoon each), then use a skewer or knife to swirl it gently into the filling.
Bake for 35–40 minutes, until the edges are set but the center is slightly wobbly.
Cool completely, then refrigerate at least 3 hours (or overnight). Cut into bars and serve chilled.
