🥔 Swedish Potato Pancakes with Lingonberries
(Swedish: Raggmunk med rårörda lingon)
A crispy, golden potato pancake paired with salty bacon and a spoonful of sweet-tart lingonberries — this dish is pure Swedish comfort food.
🥄 Ingredients (serves 2):
500 g potatoes (waxy variety)
1 egg
½ dl (50 ml) all-purpose flour
100 ml milk
½ tsp salt
Butter or oil for frying
4–6 slices of bacon (optional but traditional)
3–4 tbsp Felix rårörda lingon
👩🍳 Instructions:
Peel and grate the potatoes. Squeeze out excess liquid.
In a bowl, whisk egg, flour, milk, and salt. Add grated potatoes and stir to combine.
Heat butter or oil in a frying pan. Spoon batter into the pan and flatten into small pancakes.
Fry on medium heat for 3–4 minutes per side, until golden and crisp.
Meanwhile, fry the bacon until crispy.
Serve pancakes hot with a spoonful of Felix rårörda lingon and crispy bacon on the side.
💡 Tip: For a vegetarian version, skip the bacon and serve with sour cream and chopped chives.
