Scandinavian Marzipan & Apple Cake
Makes: 8–10 slices
Ingredients
- 200 g Garant Marzipan
- 2 medium tart apples
- 125 g butter, softened
- 100 g sugar
- 2 eggs
- 120 g plain flour
- 1 tsp baking powder
- ½ tsp ground cardamom
- Pinch of salt
- 50 ml milk
- 30 g sliced almonds
- Optional: pearl sugar for the top
To serve
- Lightly whipped cream, crème fraîche, or vanilla ice cream
Method
- Heat the oven to 175°C. Butter and line a 20 cm round cake tin.
- Grate about 150 g of the Garant Marzipan. Beat the butter, sugar, and grated marzipan until creamy.
- Beat in the eggs one at a time.
- Mix the flour, baking powder, cardamom, and salt, then fold into the batter with the milk.
- Spoon the batter into the tin.
- Core and thinly slice the apples, then arrange them over the top.
- Tear or grate the remaining 50 g marzipan over the apples. Scatter with sliced almonds and, if you like, a little pearl sugar.
- Bake for 30–40 minutes, until golden and just set in the middle.
- Cool slightly before serving.
The marzipan keeps the cake soft, rich, and almondy, while tart apple and cardamom stop it becoming overly sweet. It would work especially well as a fika cake with coffee.
