Mediterranean Lentil & Roasted Veggie Salad with Red Wine Vinegar Dressing
Ingredients
For the salad:
1 cup green or brown lentils, rinsed
1 bay leaf
1 red onion, cut into wedges
1 zucchini, sliced
1 red bell pepper, cut into strips
1 small eggplant, cubed
2 tbsp olive oil
Salt & pepper, to taste
For the dressing:
3 tbsp Druvan Red Wine Vinegar
5 tbsp olive oil
1 tsp Dijon mustard
1 tsp maple syrup or agave (optional)
1 garlic clove, finely grated
1 tsp dried oregano (or 1 tbsp fresh)
Salt & freshly cracked pepper
For garnish:
Fresh parsley or basil, chopped
Toasted walnuts or sunflower seeds
Instructions
Cook lentils: Place lentils and bay leaf in a pot with 3 cups water. Bring to a boil, then simmer 20–25 minutes until tender but not mushy. Drain and discard bay leaf.
Roast veggies: Toss onion, zucchini, bell pepper, and eggplant with olive oil, salt, and pepper. Spread on a baking sheet and roast at 200°C (400°F) for 20–25 minutes until golden and caramelized.
Make the dressing: Whisk together Druvan Red Wine Vinegar, mustard, garlic, oregano, and maple syrup. Slowly whisk in olive oil until emulsified. Adjust salt and pepper.
Assemble: Combine warm lentils, roasted veggies, and dressing in a big bowl. Toss gently.
Finish: Sprinkle with fresh herbs and toasted walnuts or seeds before serving.
