Roasted Potatoes with Herb-Garlic Drizzle
Ingredients
800 g baby potatoes (or regular, cut into chunks)
3 tbsp olive oil
Salt & pepper
For the drizzle:
4–5 cloves Druvan Garlic in Herb Marinade, finely chopped or mashed
2 tbsp of the herb marinade liquid from the jar
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Fresh parsley or basil, chopped
Instructions
Roast potatoes: Preheat oven to 220°C (425°F). Toss potatoes with olive oil, salt, and pepper. Roast 30–35 minutes until golden and crisp.
Make drizzle: In a bowl, whisk together the herb marinade liquid, olive oil, lemon juice, mustard, and mashed Druvan garlic cloves until slightly emulsified. Stir in fresh parsley.
Serve: Drizzle the dressing over hot roasted potatoes and toss gently. Finish with extra herbs on top.
Variations
Use the same drizzle over grilled zucchini, eggplant, or mushrooms.
Turn it into a salad dressing by adding 1 tbsp white wine vinegar.
Mix into cooked beans or lentils for a quick Mediterranean bean salad.
