Quick Pickled Cucumbers with Apple Cider Vinegar
Ingredients
1 cucumber (or 4–5 small pickling cucumbers), thinly sliced
½ red onion, thinly sliced
1 cup water
½ cup Druvan Apple Cider Vinegar
2 tbsp sugar (or maple syrup)
1 ½ tsp salt
½ tsp black peppercorns
½ tsp mustard seeds (optional)
A few sprigs of fresh dill
Instructions
Prep vegetables: Place sliced cucumber, onion, and dill in a clean glass jar.
Make brine: In a saucepan, bring water, apple cider vinegar, sugar, salt, peppercorns, and mustard seeds to a simmer until sugar and salt dissolve.
Pickle: Pour the hot brine over the cucumber and onion. Press down to make sure everything is submerged.
Chill: Let cool to room temperature, then refrigerate at least 1 hour (best after 24 hours).
How to Use
Serve with open-faced sandwiches, falafel, or veggie burgers.
Add to salads or grain bowls for a tangy crunch.
Use as a side dish with roasted potatoes or grilled vegetables.
