Vanilla Sugar is highly suitable as a taste enhancer in cakes and desserts.

Measures and Weights: Vanilla Sugar
100 ml = 60 g
1 tbsp = 10 g
1 tsp = 3 g


Vanilla Sugar Berry & Cream Parfait

A simple, elegant dessert that shows off the wonderful flavour of vanilla sugar — perfect after dinner or as a sweet snack.

Ingredients (4 servings)

  • 500 g mixed fresh berries (strawberries, raspberries, blueberries)

  • 3–4 tbsp vanilla sugar

  • 2 cups (500 ml) whipped cream (or coconut cream for vegan)

  • 1 tsp lemon zest (optional)

  • 1 tbsp fresh lemon juice

  • Granola or crushed biscuits, for layering

Instructions

  1. Prep the berries
    Rinse the berries and pat dry. In a bowl, gently mix them with 2–3 tbsp vanilla sugar and lemon juice; let macerate for 10–15 min so juices develop.

  2. Whip the cream
    Whip the cream until soft peaks form. Sprinkle in 1–2 tbsp vanilla sugar and continue whipping until fluffy and lightly sweet.

  3. Layer the parfaits
    In serving glasses, add a layer of berries, then a layer of whipped vanilla cream, followed by a sprinkle of granola or crushed biscuits.

  4. Finish & serve
    Top with extra berries and a dusting of vanilla sugar. Add lemon zest if you like a little brightness.

Tips & Variations

  • Yoghurt version: Swap some or all of the cream for Greek yoghurt for a lighter parfait.

  • Fruit compote: Heat berries with vanilla sugar for a warm compote — great over ice cream or pancakes.

  • Breakfast twist: Use this as a yogurt bowl topping with oats or granola.
