Simple Truffle Mushroom Pasta
About the oil: Engelmanns Truffle Oil is a high-quality olive oil infused with real white truffle (Tuber magnatum Pico), perfect as a finishing oil to give dishes a rich, earthy aroma and gourmet flair. It’s best used at the end of cooking to preserve its delicate flavour.
Ingredients (2–3 servings)
250 g pasta (tagliatelle or spaghetti)
200 g mixed mushrooms (e.g., cremini, oyster, shiitake)
2 tbsp butter or olive oil
2 garlic cloves, minced
1 small shallot, finely chopped
½ cup grated Parmesan (or vegan alternative)
Fresh parsley, chopped
Salt & black pepper
Engelmanns Truffle Oil, to finish (a few teaspoons)
Instructions
Cook the pasta
Boil salted water and cook the pasta al dente according to package instructions. Reserve about ½ cup of the pasta water, then drain.Sauté mushrooms
In a large pan, melt the butter (or warm olive oil) over medium heat. Add garlic and shallot — sauté until fragrant and soft.Cook the mushrooms
Add the mushrooms and cook until golden and tender. Season with salt and pepper.Combine with pasta
Add the drained pasta to the pan along with a splash of reserved pasta water. Toss to coat.Cheesy finish
Remove from heat and mix in most of the Parmesan (save a little for serving). Stir until creamy.Drizzle with truffle oil
Just before serving, drizzle Engelmanns Truffle Oil over the pasta. Start with a small amount — a little goes a long way!Garnish
Top with parsley and extra Parmesan.
