🐟 Eldorado Mackerel Tomato Pasta
(A 15-minute Scandinavian-style comfort meal)

This is a quick, flavorful dish using canned mackerel in tomato sauce. Perfect for busy weeknights or student-friendly cooking — no fancy ingredients, just great taste.

🍝 Ingredients:

  • 1 can Eldorado Mackerel in Tomato Sauce (125–150g)

  • 200 g pasta (penne, fusilli, or spaghetti)

  • 1 tbsp olive oil or butter

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 1 tbsp tomato purée (optional, for richer flavor)

  • Salt & black pepper

  • Fresh parsley or dill (for garnish)

  • Optional: a splash of cream or a sprinkle of chili flakes

👩‍🍳 Instructions:

  1. Boil pasta according to package instructions. Drain and set aside.

  2. Meanwhile, heat oil in a frying pan and sauté onion and garlic until soft.

  3. Stir in tomato purée (if using), then add the mackerel with all the tomato sauce. Break up the fish gently.

  4. Let simmer for 2–3 minutes. Season to taste with salt and pepper. Add a splash of cream if you like it richer.

  5. Toss with pasta and serve with chopped parsley or dill.

💡 Tip: Add some frozen peas or baby spinach for a veggie boost.
