In the production of black tea, the oxidation process begins immediately after the leaves are harvested. The tea leaves are spread out on large mesh beds, with warm air blown from underneath. During this process, the leaves lose their firmness and some of their moisture content. The softened leaves are then rolled to accelerate oxidation. It is during this stage that black tea develops its characteristic flavor, as enzymes within the leaves react with oxygen. The leaves are then dried in large ovens until only about 3–4% moisture remains.
Black tea should be stored in a cool, dry, and dark place, in containers that can be sealed tightly—and never near other food products, which could cause the tea to lose its delicate aroma.
