Vegan Skagenröra on Toast (Växtbaserad Skagenröra)
A luxurious, sea-inspired Swedish shrimp salad — without the shrimp. This vegan Skagenröra brings all the flavor and texture using chickpeas and seaweed, perfect on toast or atop baked potatoes.
đź§‚ Ingredients:
1 can chickpeas, drained and roughly mashed
3 tbsp Kavli Vegan Mayonnaise
1 tbsp finely chopped red onion
1 tbsp finely chopped fresh dill
1 tsp lemon juice
½ tsp Dijon mustard
½–1 tsp chopped seaweed (e.g. nori or dulse flakes)
Salt and white pepper to taste
Optional: a small dollop of Kalles Kaviar Vegan
👩‍🍳 Instructions:
In a bowl, combine the mashed chickpeas, red onion, dill, mustard, lemon juice, and seaweed.
Stir in Kavli Vegan Mayonnaise until creamy and well mixed.
Season with salt and white pepper to taste.
Serve on toasted rye bread, crispbread, or baked potatoes.
Optional: Top with a swirl of vegan Kalles Kaviar for extra depth.
💡 Tip: Chill for 30 minutes before serving to let flavors meld. Keeps well in the fridge for 2–3 days.
