Swedish Almond Buns (Semlor) with Garant Almond Paste
Fluffy cardamom buns filled with creamy almond paste and whipped cream — a beloved Swedish treat for Fat Tuesday and beyond.

For the buns:
7 tbsp unsalted butter, melted
1 cup milk
2 tsp active dry yeast
2 large eggs, separated (one yolk for brushing)
ÂĽ cup sugar
3ÂĽ cups all-purpose flour (plus more as needed)
2 tsp ground cardamom
1 tsp baking powder
½ tsp salt
For the filling:
200g Garant Almond Paste
2 tbsp milk
200ml heavy whipping cream
1 tbsp powdered sugar
For garnish:
Powdered sugar for dusting
👩‍🍳 Instructions:
Melt the butter and add the milk. Heat until lukewarm (about 37°C/98°F).
In a large bowl, dissolve the yeast in a few tablespoons of the warm milk mixture. Let sit for 5 minutes until bubbles form.
Add the remaining milk mixture, one egg, sugar, cardamom, baking powder, salt, and most of the flour. Mix into a soft dough.
Knead on a floured surface for about 10 minutes, adding flour if needed, until smooth and elastic.
Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
Punch down the dough and divide into 12 equal pieces. Shape into smooth balls and place on a baking sheet lined with parchment paper.
Cover and let rise for another 30 minutes.
Preheat the oven to 200°C (390°F).
Brush the buns with the reserved egg yolk mixed with a little water.
Bake for 10–12 minutes until golden brown. Let cool completely.
Cut off the tops of the buns and scoop out a small amount from the center.
Mix Garant Almond Paste with milk until smooth. Fill the buns with the almond mixture.
Whip the cream with powdered sugar until stiff peaks form. Pipe or spoon cream onto the almond filling.
Place the tops back on and dust with powdered sugar.
💡 Tip: For an authentic Swedish twist, serve your semlor in a bowl of warm milk ("hetvägg" style).
