Creamy Chanterelle Chicken with Blå Band Chanterelle Sauce
A luxurious, earthy dish bringing together tender chicken and the rich, mushroomy flavor of Blå Band Chanterelle Sauce — perfect for cozy dinners.
🧂 Ingredients:
1 sachet Blå Band Chanterelle Sauce
2 chicken breasts
2.5 dl (250 ml) milk
25g butter
1 tbsp olive oil
Fresh parsley for garnish
Salt and pepper to taste
👩🍳 Instructions:
Season the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium heat. Sear the chicken on both sides until golden, about 5 minutes per side.
Lower the heat, cover, and cook the chicken through, about 10 more minutes depending on thickness.
Meanwhile, in a saucepan, whisk the contents of the Blå Band Chanterelle Sauce sachet with the milk.
Bring to a boil while stirring, then simmer for 2 minutes.
Remove the sauce from heat and stir in the butter until smooth.
Pour the chanterelle sauce over the cooked chicken in the skillet and let simmer together for 2–3 minutes.
Garnish with chopped fresh parsley and serve immediately.
