Swedish Honey Cake (Honungskaka) with Djäknegårdens Natural Honey

A moist, spiced cake infused with the floral sweetness of Djäknegårdens Natural Honey — perfect for fika, holidays, or cozy afternoons.

🧂 Ingredients:

  • 250g all-purpose flour

  • 1 tsp ground cinnamon

  • 1 tsp ground cardamom

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 large eggs

  • 150g Djäknegårdens Natural Honey

  • 100g brown sugar

  • 100g unsalted butter, melted

  • 120ml milk

  • 1 tsp vanilla extract

👩‍🍳 Instructions:

  1. Preheat the oven to 175°C (350°F). Grease and line a 23 cm (9-inch) round cake pan.

  2. In a bowl, whisk together flour, cinnamon, cardamom, baking powder, baking soda, and salt.

  3. In a separate bowl, beat the eggs, then mix in honey and brown sugar until smooth.

  4. Add melted butter, milk, and vanilla extract to the wet mixture; stir until combined.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Pour the batter into the prepared pan and smooth the top.

  7. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

💡 Tip: Serve with a dusting of powdered sugar or a dollop of whipped cream for an extra treat.
