Black tea
Brew at 95–100 ºC; steep for 3–5 minutes.

In the production of black tea, the oxidation process begins immediately after the tea leaves are harvested. The leaves are spread out on large mesh beds, with hot air blown from underneath. During this process, the leaves lose their firmness and some of their moisture content. The softened leaves are then rolled to accelerate oxidation. It is during this stage that black tea develops its characteristic flavor, as enzymes within the leaves react with oxygen. Finally, the leaves are dried in large ovens until only about 3–4% of their moisture remains.

In the table below, you will find our recommendations for brewing excellent tea, rich in nuanced flavors.
