This rub is based on the classic Texas style, but has been given a Matmakar touch with sugar for the surface, mustard powder for acid and ginger for a little sting in the tail. The flavor is deep, balanced and made to work slowly, preferably on low heat and with at least 10–14 hours of rest after the rub.

Perfect for beef, but also works on pulled pork or slow-cooked veg.
