Black tea

Brew at 95–100°C; steep for 3–5 minutes.

The production of black tea begins with the oxidation of the tea leaves immediately after harvest. The leaves are spread out on large mesh beds, with warm air blown from underneath. During this process, the leaves lose their firmness and some of their moisture content. The softened leaves are then rolled to accelerate oxidation. It is during this stage that black tea develops its characteristic flavor, as enzymes within the leaves react with oxygen. Finally, the leaves are dried in large ovens until only about 3–4% of their moisture remains.

Black tea should be stored in a cool, dry, and dark place, in containers that can be sealed tightly. It should never be kept near other food items, as the tea may absorb their odors and lose its delicate aroma.
